One Minute Broccoli & Cauliflower Salad

Maybe two minutes if you’re moving slow ; )

  • 1/2 cup raw broccoli - chopped

  • 1/2 cup raw cauliflower - chopped

  • 1 T mayo (I like @primalkitchenfoods avocado oil mayo when I don’t want to make homemade)

  • a good squeeze of fresh lemon juice - to taste

  • a sprinkle of raw sunflower seeds

That’s it! Stir the veggies, mayo and lemon together, garnish with the sunflower seeds and enjoy. 

Optional add-ins: julienned raw carrots or cabbage, chopped raw snap peas, walnuts, pecans or pumpkin seeds instead of sunflower seeds, a dash of curry powder, a sprinkle of dried shredded coconut, raisins or currants (skip the dried fruit if you’re keeping it super low carb)

Good as a light lunch or pair it with cold leftover salmon, cold leftover chicken, a tin of sardines or mackerel for a yummy and easy low carb meal.
