I’m a sucker for a good chocolate chip cookie. I’ve played with countless combinations to create something healthier than a standard tollhouse recipe while still tasting like something I WANT to put in my mouth 😆. It has to be made with real butter and eggs to get my vote, and this one is a winner! Almond flour, coconut flour and dates team up in this gluten-free, grain free, delicious cookie recipe. Who knew indulgence could be this wholesome?

They taste even better on day 2, and they keep very well.

This recipe leaves out any gluten-free flour blends, or grain flours of any kind. No refined sugars, honey, maple syrup, agave or non-caloric sweeteners added. Almond flour, coconut flour and dates combined with butter, egg and chopped nuts create a lower glycemic load than most other cookie recipes, to help keep blood sugar levels more stable.

You know how when you snack on traditional cookies, or gluten free cookies, you get that sugar “high” followed by the dreaded “sugar crash”? I made this recipe specifically to minimize that metabolic reaction. Our bodies are not designed to handle that much sugar + refined carbohydrates at once, which is what causes that yucky feeling.

DARK CHOCOLATE CHIP COOKIES WITH DATE “SUGAR” & ALMOND FLOUR

Grain free, gluten free, no refined sugars added

Makes about 2 doz

Ingredients:

  • 1 cup fine almond flour

  • 1.5 tablespoons coconut flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon kosher salt

  • 1/2 cup grass fed butter, softened (not melted, any real butter will do)

  • 3/4 cup superfine date sugar (dates!)

  • 1 teaspoon vanilla

  • 1 large pasture raised egg (any large egg will do)

  • approx 2/3 cup Ghiradelli 72% cacao chocolate chips

  • 1/2 cup chopped walnuts, pecans or macadamia nuts

Instructions:

325F oven

Mix the egg, softened butter and vanilla until well combined.

In a separate bowl, sift together the almond flour, coconut flour, date sugar, baking soda and salt.

Mix wet with dry.

Add in nuts and chocolate chips.

Line a cookie sheet with parchment paper.

Use a medium size cookie scoop to form cookies and place on baking sheet. They don’t spread much so you don’t need a large space between each one.

Bake in preheated oven for about 10-12 minutes, checking for doneness by giving one a “poke test”. When they are firm to the touch, lightly browned on the bottom, and very fragrant with the aroma of lightly toasted nuts — they’re done.

Cool on the baking sheet and store in an airtight container at room temp.
