Sautéed Zucchini with Parmesan & Pine Nuts

It’s Zucchini Season! Here’s one of my faves, ready in 10 minutes.

Slice zucchini thin, sauté in a pan with a light drizzle of olive oil, S&P. Set aside and keep warm.

Place a few handfuls of breadcrumbs (I used 4C GF crumbs here, panko also works great) in a skillet with a drizzle of olive oil, a few tablespoons Parmesan cheese (or your favorite vegan Parmesan style cheese), and a sprinkle of pine nuts. Stir together over a medium flame just until toasty and fragrant.

Arrange warm zucchini on plates and top with breadcrumb mixture.
