Power Breakfast! Or Lunch... Or Dinner : )

For my keto peeps — Here’s a quick power breakfast, lunch or dinner. Time to replenish and recharge with a 5 minute meal!

Making use of leftovers from Friday night’s taco dinner for a delicious, nutrient rich meal - here’s what’s in my pan:

  • 2 eggs cooked sunny side up in a dollop of bacon fat 

  • leftover grass-fed ground beef cooked with a bit of granulated onion and garlic

  • avocado

  • purple onion

  • cilantro

  • a spoonful of raw sauerkraut

  • S&P

Given the chance I’ll opt to spend a little extra for Vital Farms eggs. They walk their talk, and their eggs are delicious. You can also find great eggs at your local farmers markets. Well-raised eggs are a budget-friendly item for your kitchen, they pack a good nutritional punch for the money! 

Do I always buy grass fed & finished beef? When my food budget allows, sure. But honestly, sometimes I just get the best meat I can afford, or whatever is on sale that looks good. 

Did you know that with most beef in the supermarkets the cattle spend a majority of their life in pasture?

Are you worried about the hormones or antibiotics you hear about sometimes in “grocery store meat”? From what I’ve learned, the amounts of these substances are negligible and shouldn’t deter us from buying these foods.

It’s important to share this information, as there can be some weird peer pressure in the health foods world to only eat 100% Grass Fed and Finished Beef and if you’re not doing that you’re just not doing it right or just not really committed to the program. The most important thing is to get the healthy, nutrient dense foods on your plate. Meat is one of the most nutritious foods on the planet, period.

I buy a few avocados when they’re on sale and keep them in the fridge once ripened to extend their shelf life.

A jar of refrigerated sauerkraut can be pricey, but you can make it last. One brand I really like is Bubbies. Their pickles are 100% raw, the sauerkraut does go through a quick heat process to slow down the fermentation so it’s neither 100% raw nor officially pasteurized. If you have the room in your home try making a batch of homemade sauerkraut, it’s the wallet-friendly option for sure, and pretty easy once you get the hang of it! 

Eating well doesn’t have to break the bank. When we’re motivated to eat real, healthy foods, we find ways to work it into our budget. The payoff is priceless, when it comes to feeling well.
